Ingredients

  • 18.4 ounce fudge brownie mix
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1/3 cup vegetable oil
  • 1 tablespoon water
  • 1 tablespoon vanilla extract
  • 1 tablespoon coffee or espresso optional, sub with 1 tablespoons water
  • ¾ cup dark chocolate chips

Instructions

  • Preheat the oven to 350°F and line baking sheets with parchment paper.
  • In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the brownie mix, flour, vegetable oil, eggs, water, vanilla and coffee. Mix until no dry spots remain.
  • Fold in chocolate chips by hand.
  • Using a tablespoon cookie scoop, place in rounded balls onto the prepared baking sheet.
  • Bake for 10 minutes or until the tops look glossy and puffy, they might appear underbaked and that is fine.
  • Remove the oven and cool for 5 minutes before transferring to a wire rack to cool fully.
