Sift or whisk together both flours, baking soda and salt in a medium mixing bowl. Set aside.
In a large mixing bowl using a stand mixer or a handheld electric mixer, cream together the butter and sugar until smooth. Add the vanilla extract and eggs, mixing until no streaks remain.
In two additions, combine the wet ingredients with the dry ingredients.
By hand, fold in the granola and other add-ins.
Cover and chill cookie dough for a minimum of 1 hour.
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Use a 1 1/2 tablespoon cookie scoop and place dough onto the parchment 2 inches apart.
Bake for 14-16 minutes or until tops are lightly browned.
Remove and allow to cool for 2-3 minutes before transferring to a wire cooling rack.
