Granola Cookies

A better-for-you cookie that is full of granola, dried fruit, nuts and chocolate chips. Great as an after school snack or late night munchie.

Ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon coarse kosher salt
  • 3/4 cup unsalted butter softened
  • 1 cup brown sugar
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 1 1/2 cups granola
  • 1/2-3/4 cup add-ins mini chocolate chips, chopped nuts, dried fruit

Instructions

  • Sift or whisk together both flours, baking soda and salt in a medium mixing bowl. Set aside.
  • In a large mixing bowl using a stand mixer or a handheld electric mixer, cream together the butter and sugar until smooth. Add the vanilla extract and eggs, mixing until no streaks remain.
  • In two additions, combine the wet ingredients with the dry ingredients.
  • By hand, fold in the granola and other add-ins.
  • Cover and chill cookie dough for a minimum of 1 hour.
  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Use a 1 1/2 tablespoon cookie scoop and place dough onto the parchment 2 inches apart.
  • Bake for 14-16 minutes or until tops are lightly browned.
  • Remove and allow to cool for 2-3 minutes before transferring to a wire cooling rack.
